Salmon steaks with basil
Cook salmon steaks accompanied by zucchini tagliatelle!

Chop the basil leaves.

Pierce the salmon fillets, put a little basil in each pocket, season with salt and pepper.

Peel and finely chop the shallot.

Cook the tagliatelles in boiling salted water.

Using a vegetable peeler, create spaghetti from zucchini, then blanch them for 2 minutes in boiling salted water; drain and keep warm.

In a saucepan, melt the butter without letting it brown; sauté the shallots.

Add the chopped basil, let cook on low heat for 2 minutes.

Add the fish stock, reduce by half, then add the cream, season lightly with salt and pepper; keep warm.

In a pan, cook the salmon fillets skin-side down for 6 minutes on medium heat.

On the serving plates, place the cooked salmon fillets, add the tagliatelles and zucchini spaghetti.

Pour some of the basil sauce over the top.

Garnish with basil leaves and serve.
