Pour a skillet, add a drizzle of olive oil and sear your scallops for 5 min, flipping them halfway through. In each plate, place some arugula, a drizzle of olive oil, a drizzle of balsamic vinegar, some finely sliced shallots, salt, and pepper. Place your scallops on the arugula and serve warm with a streak of balsamic vinegar on either side of the plate for decoration.
