De-shell the langoustines, keeping the tails, and cook in a pan with a knob of butter for 2 minutes. Cut the mangos on either side of the pit, peel them, and slice into thin strips. Halve the avocados, remove the pits, and cut into small dice. Combine the mango and avocado in a mixing bowl, mix, cover, and chill for 30 minutes. Serve the contents of the mixing bowl onto plates, topped with the langoustines. Mix the oil, pepper, and vinegar in a bowl and dress your plates. Add a gressin to decorate each plate.
