      Dice the avocados.

    Add lemon juice and mix.

    Bring a pot of water to a boil.

    Blanch the tomatoes for a few seconds, then drain them.

    Peel the tomatoes and dice them.

    Place them in a colander, sprinkle with salt, and let drain for 15 minutes.

    Slice the onion. Mix the diced avocados with the tomatoes, pine nuts, and onion in a mixing bowl.

    Mix 3 tablespoons of olive oil with 1 tablespoon of vinegar.

    Pour the dressing over the vegetables.

    Divide the tartare into 4 ramekins and chill in the refrigerator.
