Cucumber Quinoa and Feta Salad

Peel the cucumbers, halve them lengthwise, and remove the seeds using a teaspoon.

Cut the flesh into cubes.

Place them in a sieve, sprinkle with salt.

Let them drain for 30 minutes, and during this time, cook the quinoa in a pot of boiling water (10 minutes on the stove, 10 minutes off the heat).

Dry the cucumbers on paper towels.

Cut the feta into small cubes and finely chop the red onion.

For the sauce, mix in a bowl the juice of half a lemon, yogurt, heavy cream, and olive oil.

On a large serving dish, arrange the cucumber cubes and feta cubes.
