    Oil a baking dish, slice half of the lemon into rounds and place them on top. Stuff the mackerel with the herb bouquet, place it on the baking dish, and add the other half of the lemon sliced into rounds on top. Cut your tomatoes in half and the onion into slices, then place them on either side of the fish. Season with salt and pepper, and drizzle a bit of oil over the mackerel. Bake for 10 minutes, pour 6 cl of white wine over it, and continue baking for another 10 to 15 minutes. Once the flesh is cooked, remove the fish from the oven and cut the mackerel into 2 fillets, one on each side. Distribute the fish, onions, and tomatoes onto plates and pour a bit of the cooking juice over each piece.
