Clean your eels, cut off the head and gut them if not already done, then cut into 4 cm pieces. In a bowl, pour a layer of flour and roll your eel pieces in it to coat them. In a frying pan, add a drizzle of oil and cook the eels for 3 minutes, turning them halfway through cooking. Remove any excess fat from cooking and set the eel aside on a plate, then chop the parsley and garlic separately. In your pan, melt 250 gr of butter, and when it takes color, add your eel and cook for 5 more minutes, turning regularly. At the end of cooking, add the parsley and garlic, mix for 2 minutes, then serve hot.
