    First prepare the sauce: sauté all finely chopped vegetables in butter, sprinkle with flour, let it brown slightly without stopping to stir;

    Deglaze with broth;

    Add the bouquet garni, salt and pepper and simmer over low heat for 15 minutes.

    Sauté the mushrooms in 20 grams of butter.

    Melt the remaining butter in a large Dutch oven;

    Place the beef roast inside and turn it to brown on all sides for 10 minutes;

    Lightly season with salt and pepper.

    Strain the sauce, pour it into the Dutch oven along with the mushrooms;

    After 10 minutes, add the Madeira;

    Simmer for another 5 minutes and serve.
