    Wash, dry, and pick the currants, blend the fruits in a mixer, then strain the obtained puree through a sieve.

    Then, heat the sugar and water until boiling, maintain for 2 minutes, and let it cool down.

    Mix the sugar syrup with the currant puree, add the heavy cream, pour into the ice cream maker and freeze.

    Serve the ice cream in scoops dusted with chopped almonds, or with Chantilly cream drizzled with a dash of currant liqueur.
