In a mixing bowl, beat the two eggs vigorously, then microwave the almond paste for 1 minute, crush it and add it. Add 20 gr of sugar and continue to beat the mixture, then pour in the 10 gr of cornstarch. Pour the preparation onto a baking sheet lined with parchment paper and bake for 10 minutes, then let cool. Put the ganache in the freezer for 10 minutes and line the log mold with baking paper. Remove the ganache and whip it to cream consistency with an electric mixer, then place it in the mold. Take out the mini-log creams and press them into the ganache just enough to cover them. Crush the speculoos cookies and mix with 50 gr of melted butter, then spread over the log. Place your log in the freezer for 2 hours and decorate with toasted hazelnuts for 2 minutes, sprinkled with sugar to caramelize.
