Heat half of the vegetable oil in a large skillet and fry the chicken pieces in batches until they are lightly golden brown.

Heat the remaining vegetable oil in a wok and sauté the onion, stirring continuously, until it is slightly golden.

Add the masala and cook for 5 minutes without stopping to stir until the spices are fragrant.
