Chicken cutlets with leeks and cider

Cut the chicken cutlets into pieces.

In a pan, fry the chicken pieces in a little oil then set aside.

Chop the shallots and onions.

Remove the green parts from the leeks, wash them, and slice the white part thinly.

Slice the mushrooms.

In the same pan as the chicken, add some more oil and fry the onions, shallots, and leeks for 5 minutes. Add the bacon and mushrooms, and let cook for about ten minutes.

Put the chicken pieces back in the pan, and continue cooking for another 5 minutes, stirring occasionally.

Cover with cider, and let simmer for about thirty minutes.

Just before serving, add the cream, stir well, and let it simmer for another 5 minutes. Serve this dish with rice or sautéed potatoes.
