How to prepare Chicken with Crawfish?

    For the crayfish:

    Split the crayfish by pulling on the central fin to remove the intestine.

    Sauté the crayfish in an oiled pan for 3 minutes. Then add 50 g of carrot, 50 g of finely chopped onions, 50 g of minced shallot, and flambe with 5 cl of cognac then mix.

    Add 40 cl of white wine, a sprig of tarragon, the tomatoes cut into small pieces, 2 cloves of minced garlic, and a bouquet garni.

    Season with salt and pepper then cook over high heat for 10 minutes. Remove the crayfish and keep the cooking juice.

    For the chicken:

    Cut your chicken pieces, and save the carcass.

    In a pot of water, prepare a white broth with a leek, 50 g of carrots, 50 g of onions, 2 cloves of minced garlic, 1 celery stalk, and 1 bouquet garni.

    Simmer until you get half a liter of broth.

    Roll your chicken pieces in 100 g of flour then cook them in a casserole with 50 g of butter for 20 minutes. Once the chicken is cooked, pour 10 cl of white wine and 5 cl of cognac into the casserole, let it reduce, then add the white broth, the crayfish cooking sauce, and the 10 cl of cream.

    Add 50 g of butter and a pinch of flour to thicken the sauce and boil for 5 to 10 minutes until you get the desired consistency.

    Serve by distributing the chicken and crayfish pieces, then cover with the sauce, and sprinkle with chopped parsley.
