Chop the onions very finely.

Peel the garlic clove, cut it into four pieces and remove the germ.

Cut the papaya in half.

Remove the seeds, cut each quarter into three and peel the slices.

Put them in a dish, drizzle with 3 tablespoons of green lemon juice, turn them over and let them marinate.

Devein the shrimp tails by leaving the last ring, slit them lengthwise along the back up to 1 cm from the head and remove the black vein but keep the green part.

Roll the shrimps inwards, against their natural tail movement.

Peel the ginger and cut it into four pieces.

Pour 1/3 liter of water into a saucepan.

Season lightly and add the ginger.

Bring the water to a boil, put in the shrimp tails.

Cook for 2 minutes on a gentle simmer, then remove with a slotted spoon and keep them warm in a dish.

Add the shrimp heads into the water.

Simmer for 10 minutes while pressing down with a spatula.

Strain and reserve this broth.

Heat the oil in a non-stick pan and sautΓ© the onions gently for 3 minutes over low heat.

Add the curry, cumin and minced garlic using a press.

Stir for 30 seconds then pour in the coconut milk and broth.

Pour this sauce over the shrimp tails.
