Rice Artichetes
Enjoy the best summer produce with the artichoke and rice salad!

Peel and deseed the tomatoes, cut them into cubes.

Melt the butter in a pan, sauté the shrimp, season with salt and pepper.

Fill a pot with water and blanch the artichoke hearts with salt for 10 minutes.

Wash and peel the potatoes.

Cut them into small cubes.

Cook the potatoes then the rice in salty water.

In a bowl, mix the vinegar and oil with salt and pepper.

Put in a salad bowl the potatoes, the tomatoes, the artichoke hearts (keep 2 aside) and the dressing, and mix.

In small bowls or verrines, pour your rice and decorate with half an artichoke heart and a spoonful of vegetable mixture.

Place the rice in the center and surround it with the artichoke salad on which you can distribute the peeled shrimp.
