Fenugreek Tart and Roquefort
A surprising but utterly delicious fennel-blue cheese wedding!

First prepare the puff pastry: mix all the ingredients without adding water; add a little flour if necessary to prevent the dough from sticking to your fingers.

Form a ball and let it rest.

Meanwhile, prepare the tart filling: finely chop the fennel bulb and steam it for 20 minutes (use an autoclave for quicker results).

Once cooked, crumble the roquefort, add the beaten eggs, milk, and fennel.

Season to taste (be careful with the already salty roquefort), pepper.

Preheat your oven to 200°C (thermostat 6/7).

Roll out the puff pastry, prick it, and distribute the fennel/egg mixture.

Sprinkle with parmesan if desired, and bake for 30 minutes in a hot oven.
