Litchi mousse and its mango coulis

Let the gelatin sheets soften in a bowl of cold water for 10 minutes.

Peel and remove the pits from the lychees over a small pot to collect the juice.

Blend the lychees with the juice of a green lemon.

Bring the lychee juice to a boil and immediately remove from heat.

Melt the gelatin sheets with the juice and stir well.

Gradually add the gelatin mixture to the pureed lychees, stirring continuously.

Beat the egg whites into stiff peaks with sugar.

Gently fold the whipped egg whites into the lychee mixture, continuing to beat.

Divide the preparation among 4 glasses and refrigerate.

Whip the cream into chantilly cream.
