Love Tiramisu
A love tiramisu to celebrate Valentine's Day in lovers' company.

Caution: Prepare the night before the tasting!

Separate the egg whites from the yolks.

Put the yolks and brown sugar in a mixer.

Beat the mixture for a few moments until it is well homogeneous and fluid (about one minute).

Pourse into a bowl.

Add the mascarpone (you can find it in the cheese section of your supermarket) spoon by spoon.

Put the egg whites in a clean mixer (do not touch them with the yolk) and beat until stiff peaks form.

Optionally, add two drops of lemon juice to help stabilize the whipped whites.

Gently fold the mixture of sugar and eggs into the beaten whites without deflating them.

The preparation should now be airy and light.

Add the lemon juice.

Mix in a small bowl the strong cold coffee with the cognac or Marsala (do not overdo it with the cognac to avoid an overly alcoholic cake).

Quickly dip the biscuits into the coffee and alcohol mixture.

Do not let them soak too long, a second is enough to infuse them with the flavor of the mixture.

Line the bottom of a large deep dish with the soaked biscuits.

Cover half of the dish with the preparation.

Layer another layer of biscuits over the preparation then cover with the rest of the preparation.

Smooth with a spoon.

Sprinkle with bitter cocoa and refrigerate overnight.
