Light chocolate mousse
The recipe for light chocolate mousse, to indulge without gaining weight!

Break the chocolate bar into a measuring cup and cover with boiling water.

Let it melt.

In the meantime, separate the egg whites from the yolks.

Make sure to thoroughly rid of any impurities.

Add the sugar or fructose to the yolks and beat until the mixture is frothy.

Drain the water from the chocolate slowly.

Once all the water has evaporated, add the melted chocolate to the egg yolk-sugar mixture gradually (do not let the chocolate cool, otherwise it will harden).

Beat the whites into stiff peaks: they should be firm.

Gently fold the whipped whites into the chocolate mixture in several stages using a metal spoon (never use an electric whisk, or the whites will deflate).

Place the preparation in the refrigerator for at least three hours to set.
