Preheat the oven to (210Β°C).

Slice the leeks into thin rounds and sautΓ© for 10 minutes in 20 g of butter.

Beat the eggs with 10 cl of cream and a pinch of nutmeg.

Season with salt and pepper.

Mix in the leeks.

Divide the mixture among 4 buttered ramekins.

Place the ramekins in a bain-marie and bake for 20 minutes. Remove from the heat and quickly flambΓ© the mousses with wine and pepper.

Unmold and keep some of the shells for decoration.

Strain the cooking juice.

SautΓ© the shallots in 20 g of butter and add the curry powder.

Add the mussel juice and the remaining cream.
