Open and clean the scallops.

Cut the halves (the white part) of the hazelnuts into two identical pieces.

Marinate the scallops with the butter-cooked shallots, a bit of olive oil, salt, cayenne pepper, parsley, thyme, bay leaf, and some fennel seeds.

Skewer a piece of hazelnut, a smoked ham slice, and a pepper slice.

Repeat this operation once more.

Dust the skewers with flour, sear them in the oil for 5 minutes, and flambe them with cognac just before serving.
