Arrange the duck legs on the coarse salt and cover with the rest of the salt.

Cover with plastic wrap and leave in the fridge for 24 hours. Preheat the oven to 160Β°.

Rinse the duck legs to remove traces of salt and dry them. Remove excess fat from the legs.

Melt the duck fat in a Dutch oven.

Submerge the legs in the fat and bring to a boil.

Cover and let cook for 2 hours. Drain the legs then plate them.
