Cut the pomelos in half and remove each half with a spoon and reserve the flesh.

Remove the white membranes as well and throw them into a shallow bowl, mix the pomelo flesh with the surimi and chopped palm hearts then drizzle with olive oil.

Season with salt and pepper, mix well, fill each half pomelo with the preparation then decorate with a shrimp.
