Clean the mussels, set aside.

Put the white wine and chopped shallot, with the bouquet garni, in a saucepan, add the cleaned mussels.

Cover and cook for 3 minutes until the mussels open, strain the juice and reserve it.

Remove the shells from the mussels and sauté them in a large skillet with butter and garlic.

Add the mussel juice, flour, and heavy cream, season with salt and pepper and let simmer for 8 minutes.

Pour the preparation into a baking dish, beat the eggs and pour over it, season with salt and pepper.
