    Scrape the carrots, peel the onions.

    Melt the butter in a pot and brown the meat on all sides in it.

    Remove the meat and sauté the chopped onions.

    Return the meat to the onions.

    Deglaze with a mixture of 2/3 wine and 1/3 water.

    Add salt, pepper, thyme, bay leaf, parsley, tomato concentrate, and cut-up carrots.

    Bring to a boil over high heat.

    Preheat the oven.

    Cover the pot with a buttered piece of foil and an airtight lid.

    Bake for 2 hours and 30 minutes in the oven at 180°C. The last half hour of cooking should be done uncovered to allow the sauce to reduce.

    Serve on a warm platter and sprinkle with roughly chopped parsley leaves.
