    Season the meat with salt and pepper.

    Brown it in butter and cook in the oven for about 1 hour with the chopped onion, thyme, and bay leaf.

    When the meat is cooked, deglaze the cooking liquid with white wine.

    Strain through a Chinese sieve and whisk in the mustard.

    Return to the heat and let reduce for a few minutes.
