How to prepare Potimarron and Sausages Gratin?

    Remove the skin from the pumpkin, scoop out the seeds with a knife point, dice the pulp and wash these under a stream of clear water.

    Peel the potatoes using a bread knife, rinse them and cut the flesh into cubes as well.

    Steam cook both vegetables together for about 30 minutes, or in a pressure cooker for 15 minutes.

    Peel the two onions and garlic, then chop them very finely.

    In a pan, heat the oil gently, add the onion and garlic mixture, let it sweat covered on low heat, add the sausage pieces, chopped parsley, four spices, a pinch of salt and pepper.

    Mix everything thoroughly and cook over slightly higher heat until lightly colored.

    Preheat the oven to setting 7 (210Β°C).

    Blend the pumpkin and potatoes into a puree, season with salt and pepper.

    Add to the obtained puree 30 grams of butter and half of the shredded cheese.

    Spread the fried sausage pieces in the bottom of a gratin dish.

    Cover with the puree, smooth the surface with a spatula and sprinkle with the remaining shredded cheese.

    Distribute the remaining butter over the top in small clumps.

    Bake, let it cook for 25 to 30 minutes. The top of the gratin should be golden brown at the end of cooking.
