    Decore the shrimp.

    Melt the shrimp shells and heads in butter in a pan.

    In another pan, sauté the shrimp with minced and finely chopped garlic and shallots.

    Pour in the coconut milk.

    Add the juice from the previously fried shrimp shells in the butter.

    Add 1 to 2 tablespoons of red curry paste; season.

    Add a hint of tomato concentrate and a few drops of lime juice.

    Add sliced Thai basil and let simmer for about 15 minutes.

    Just before serving, add fresh diced mango and serve with Thai white rice.
