    Place the rice in a strainer and wash it under running water.

    Put it in a pot with a good glass of water and a pinch of salt.

    Bring to a rapid boil, let it boil for 2 or 3 minutes.

    Meanwhile, heat the milk with sugar and vanilla.

    Add the slightly cooked rice to the water.

    Boil, then simmer on very low and steady heat without stirring.

    The rice is done when it has absorbed all the milk; it should be grainy but tender.

    Remove from heat, add the eggs.

    Caramelize a Charlotte mold.

    Place the rice in it.

    Bake at 180°C for 30 to 40 minutes. Unmold when warm or cold.
