Finely chop the onions.

Remove the pits from the olives and soak them in warm water.

De-seed and slice the bell peppers.

In a pan, heat 3 tablespoons of oil, then gently sauté the onions for 10 minutes.

Add the rice to the onions and let it absorb the oil; add the tomato concentrate, season, pour in warm water, and cover.

Place the diced bacon, drained olives, and sliced chorizo on top of the rice without mixing them.

Seal tightly and cook for 40 minutes.

Heat the remaining oil, and sauté the bell peppers for 30 minutes.

Serve the rice with its garnish on a plate, add the bell peppers, and pour in the cooking liquid.
