Prepare the choux pastry.

Use a size 13 tip for large eclairs and a size 7 for small ones.

Fill with choux pastry and arrange strips of dough on the greased tray.

Prepare the custard cream, flavor it with coffee essence.

Open the eclairs lengthwise, pipe the cream into them using the piping tip.

Place the caramel in a pan, flavor it with diluted coffee essence by adding 1 tablespoon of water, let it cool down, and drizzle it over the eclairs.
