    Wash and drain the strawberries.

    Remove the stems and blend 300 g with lemon juice and 30 cl of water.

    When everything is reduced to a cream, add the sugar and egg white.

    Blend for a few more moments and pour the mixture into the ice cream maker where it will need to remain about 30 minutes.

    Then place the container of the ice cream maker in the freezer for 15 minutes and the serving bowl in the refrigerator.

    Place the reserved strawberries in the center of the sorbet poured into the bowl.
