Preheat your oven to 180°c. Cook the bulgur in a large volume of water with vegetable broth, following the time indicated on the package.

Once cooked, drain it.

Wash the tomatoes and cut off their tops.

Reserve the caps.

Empty the flesh out of the tomatoes and reserve again.

Wash the mushrooms and chop them into dice.

Peel and chop the onion.

In a mixing bowl, combine the bulgur with the tomato flesh, mushrooms, and onion.

Beat the egg and add it to the mixture.

Finally, add the parmesan, salt, pepper, and herbes de provence.

Fill the tomatoes with the mixture, then bake for 30 minutes. Serve with a green salad.
