Spinach and Ricotta Lasagna
From vegetarian lasagnes to spinach for a change!

Preheat the oven to 180°C. Cook the pasta in boiling water.

Wash, de-string, and chop the spinach.

Mix the egg, ricotta cheese, and spinach in a bowl.

In a baking dish, lay out a layer of lasagna noodles.

Choose a pan according to your preference, that is, a large dish for a lasagna with little filling and a smaller dish for a more generous lasagna.

Then spread the spinach mixture, chopped mushrooms, a bit of Mozzarella, and Parmesan cheese.

Add another layer of lasagna noodles.

Evenly spread the tomato sauce.

Add the remaining Mozzarella and Parmesan cheeses.

Bake in the oven for about 30 minutes until the cheese is lightly golden.
