    In a sauté pan, heat the oil.

    Add the eggplant cut into cubes and the onion sliced.

    Sauté on high heat for about 5 min.

    Add 40 cl of water, vegetable broth, tomatoes, zucchini (in cubes), curry, and cumin.

    Stir and let simmer for about 10 min.

    Season to taste.

    Add the drained chickpeas and cook everything for another 5 minutes.
