Sift the flour into a bowl.

Add water, yeast, salt and knead the dough.

Add olive oil, knead again until the dough forms a ball (minimum 10 minutes).

Cover the bowl with a damp cloth (or plastic wrap).

Let it rest for 1 hour.

Gently press the dough to release the air bubbles.

Place the dough in a round baking dish with high sides.

Brush the top with water (to make the crust).

Let it rest again, covered, for 1 hour.

Bake at 240°C (unpreheated oven) for 30 to 40 minutes.

Remove from the mold and wait 1 day before slicing to make your surprise bread.

Slicing the bread: Remove the top of the bread.

Cut around the crumb (about 1 cm from the edge) without piercing the bottom. Insert the knife at the base of the loaf and rotate it to separate the crumb from the bottom. Push the crumb through the cut and slice it thinly for sandwiches.

Arrange the crumb slices as sandwiches, cut them into 6 pieces, and put them back in the bread.
