    Trim the endives; they will be used to serve the tuna rillettes.

    Pour the fresh cheese into a mixing bowl and mash it with a fork.

    Break up the tuna and add it to the cheese.

    Squeeze the lemon juice and pour it into the preparation.

    Chop the parsley and add 2 good tablespoonfuls.

    Crush the garlic and add it to the preparation.

    Spread the endive leaves with the tuna rillettes.

    To give a bit of color, you can sprinkle them with Espelette pepper. Chill until serving time.
