Preheat your oven (Th6).

In a bowl, mix the drained tuna, sour cream, sliced and peeled apples, salt, pepper, and Provence herbs.

Cut the puff pastry into 4 pieces.

Place a small mound of the previous mixture in each piece of puff pastry.

Fold each piece and brush with egg yolk.

Arrange your 4 tuna-apple tarts on a baking dish (Th6) and bake for about 20 minutes, watching closely to ensure they are golden brown when done.
