Rinse the lentils, immerse them in a large pot of cold water.

Bring to a boil, then drain.

Cover the lentils with water again, add the celery and sliced carrots, the onion pierced with a clove of cinnamon, the bouquet garni, seasoning, and bacon.

Cover, bring to a boil.

Simmer for 1 hour and 30 minutes (30 minutes in a pressure cooker).

Add the sausages and cook for an additional 15 minutes.

To serve, remove the bouquet garni, cut the bacon into pieces and slice the sausages.

You can also serve this soup as a purée.

Pass the lentils and vegetables through a blender, adding the cooking liquid to achieve the desired consistency.

Serve in bowls with chunks of bacon and sausages.
