Squeeze the lemon juice and pour it into a saucepan, on low heat.

Add 80 gr of sugar, the lemon zest, the flour and mix.

Cook until the juice thickens, then remove from heat.

Crush the biscuits.

Mix them with the butter and spread them at the bottom of the mold.

Then bake for 10 minutes in the oven.

Blend the avocado flesh with the mascarpone cheese.

Whip the cream cheese with the cream, milk, and remaining sugar.

Fold in the avocado and eggs one by one, then half of the thickened lemon juice.

Mix until you get a homogeneous mixture.

Put the dough on top of the baked biscuits and bake for 30 minutes.

Let it cool at room temperature (1 hour) then refrigerate (12 hours).
