Peel and cut the apples into thin slices.

Melt the butter in a saucepan.

Pierce the apples with a fork, sprinkle with cinnamon, and cover for 10 to 15 minutes on very low heat.

While that is cooking, beat the eggs with a fork, season with salt and pepper, then add the milk.

Mix well.

When the apples are done, remove the liquid (butter and apple juice) and pour it into a pan.

Heat the pan and add the egg mixture. Add the apples immediately.

Cook, lifting the omelette occasionally until it is slightly runny.
