    Wash, peel, and cut the potatoes into pieces.

    Cook the potato pieces in boiling salted water on medium heat for 10 minutes.

    Mash the cooked potato pieces using a potato masher.

    In a bowl, mix the mashed potatoes with 3/4 of the gruyère, milk, chopped parsley, saffron, cumin, salt, and pepper.

    Pour the mixture into a buttered mold, brush the surface with beaten egg and sprinkle with gruyère.

    Bake in the oven at 180° C for 20 minutes.
