    Peel the carrots and potatoes.

    Wash them, dry them, and grate them.

    In a large skillet, melt the butter and add the vegetables, chopped onion, salt, and pepper.

    Cook gently for 15 minutes, stirring occasionally.

    Set aside the vegetables in a bowl.

    In a pitcher, mix the milk, eggs, and shredded gruyère, stir, and pour into the bowl then mix again.

    Pour about two to three tablespoons per pancake on a hot skillet and flip regularly during cooking for about 15 minutes.
