    Crumble the roquefort in a plate.

    Break the eggs into a bowl and add salt and pepper.

    Mix well.

    Cook the egg frittata on the stove at very low heat (or in a bain-marie).

    In both cases, stir constantly until you get a frittata that is neither too hard and dry nor too runny.

    Once the frittata is cooked, add the roquefort quickly to stop the cooking process.

    On plates, arrange a small pile of mâche and cut the slices of baguette into 2 triangles, then toast them.

    Place them on either side of the pile of mâche and put the frittata in the center of the plate, then sprinkle with toasted walnuts.
