Mix the powdered sugar and butter until you get a smooth cream. Using your whisk, beat the egg white to stiff peaks and gently fold it into the butter-sugar mixture, then gradually add the flour while mixing well.

Lightly grease the baking sheet and shape the cookies (use a teaspoon) leaving about 3 cm between each cookie.

Bake for 6 minutes while closely monitoring the cooking process.
