    Bring the milk to a boil with the butter and seasoning.

    Pour the flour in and beat with a whisk until the dough is dry, over low heat.

    Remove from heat, blend the goat cheese in a mixer and add it to the dough.

    Add the whole eggs one at a time, working well after each addition.

    Let it rest for 30 minutes.

    Form into balls and poach them in salted boiling water.

  7. 7

    Drain them as they cook and serve them drizzled with melted butter and chopped chives.
