Peel your pumpkins, clean them, cut into small dice and cook in a pot of salted water for 15 minutes. In a mixing bowl, beat 3 egg yolks, add 30 cl of milk, the 50 gr of gruyere cheese, a teaspoon of sugar and ginger, and some chopped chives. Beat the whites to stiff peaks in a bowl and fold into the mixing bowl. Blend the pumpkins and mix with the rest along with the 50 gr of butter. Pour the preparation into an oven dish and sprinkle with 20 gr of gruyere cheese. Bake in the oven at 240°C for 30 minutes.
