Chinese stir-fried beef
A traditional Chinese dish, perfect for celebrating the Chinese New Year.

Cut the meat into small cubes or regular strips; place it in a bowl and sprinkle with the flour; gently beat one egg white; add 1 tablespoon of it; season lightly and mix well.

Peel and finely chop the onions and leek to obtain the equivalent of 4 tablespoons.

Heat the oil in a pan; add the meat and cook for 1 minute without browning; drain with a slotted spoon and set aside on a plate.

Brown the onion and leek mixture in the same oil, then return the meat and stir; add 1 or 2 tablespoons of water along with the soy sauce or viandox; let it cook for 2 minutes over high heat, stirring constantly with a wooden spoon.

Pour in the white wine into the pan; heat for a few moments; immediately pour it into the serving dish.
