    Wash the potatoes, put them in a pot filled with salted water, and cook them with their skin on.

    Once cooked, drain them and remove the skin, pass them through a food mill to obtain a puree or mash them with a fork.

    Put in a bowl the mashed potatoes, flour, beaten eggs, milk, cream, and grated nutmeg, season with salt and pepper.

    Mix well until you get a homogeneous dough.

    Heat the oil in a deep frying pan, spoon tablespoons of dough into it and fry the pancakes on both sides until golden.

    Serve immediately.
