Melt the broken chocolate in small pieces using a double boiler.

Add the butter, stir until you get a smooth cream.

Remove from heat and add the egg yolks one at a time, then the sugar and sifted flour.

Gently fold in the beaten egg whites with a pinch of salt.

Pour the batter into a springform pan lined with buttered parchment paper, filling it only two-thirds full.

Remove from pan and let cool on wire rack.

To decorate: Spread apricot jelly around the edge of the cake and attach praline. Place a star-shaped cover on top where you have cut out a star, and dust with powdered sugar using a small sieve that also removes lumps or use a small strainer.

Carefully remove the mask afterwards.

It's better to make this cake the day before: wrap it in parchment paper once cooled, and keep it at the bottom of the refrigerator. You can also fill the cake with apricot jelly or marmalade before frosting.
